Responsibilities:
 * Starter Management: Maintain and cultivate healthy and active sourdough starters, including feeding, refreshing, and adjusting starter schedules based on environmental conditions and production needs.
 * Dough Mixing: Accurately and efficiently mix doughs according to established recipes, paying close attention to hydration levels, mixing times, and dough development.
 * Fermentation Control: Manage bulk fermentation, proofing, and retarding processes to ensure optimal flavor development and dough structure.
 * Shaping and Scoring: Skillfully shape and score a variety of sourdough loaves, ensuring consistent size, shape, and aesthetic appeal.
 * Baking: Operate and maintain deck ovens or other baking equipment to bake sourdough breads to perfection, achieving desired crust color, crumb texture, and internal temperature.
 * Quality Control: Monitor the quality of all baked goods, identifying and addressing any inconsistencies or issues.
 * Inventory Management: Assist with monitoring ingredient inventory and communicating needs to the appropriate personnel.
 * Cleaning and Sanitation: Maintain a clean and organized work environment, adhering to all food safety and sanitation guidelines.
 * Collaboration: Work effectively with other bakery team members to ensure smooth and efficient production.
 * Adherence to Recipes: Follow established recipes and production procedures accurately.

Qualifications:
 * Proven experience as a sourdough baker, with a strong understanding of sourdough principles and techniques.
 * Demonstrated expertise in starter maintenance, dough mixing (by hand and/or machine), fermentation control, shaping, and scoring sourdough breads.
 * Ability to work independently and as part of a team.
 * Strong attention to detail and a commitment to producing high-quality products.
 * Excellent time management and organizational skills.
 * Knowledge of food safety and sanitation practices.
 * Ability to lift up to 50 pounds and stand for extended periods.
